This is one of my favorite salads I’ve made in a while, and it took me less than 20 minutes! I made a big batch to have for lunch all week—you could also add shredded chicken for extra protein! It's healthy, simple, and delicious.
Salad Ingredients
• 3 mini cucumbers, thinly sliced
• 14 oz heart of palms, cut into small pieces
• pitted green olives, cut into halves
• 3-4 oz of crumbled feta cheese
• Fresh dill
• Fresh parsley
Dressing Ingredients
• 3 tbsp olive oil
• 1 tbsp red wine vinegar or fresh lemon juice
• 1/2 tsp dijon mustard
• 1/2 tsp honey
• Salt and pepper
Directions
1. Combine all salad ingredients into a bowl
2. Finely chop up as much fresh dill and parsley as you’d like and add to bowl
3. In a separate bowl, whisk all dressing ingredients
4. Mix in dressing with salad and serve!
