Creamy Shells with Sausage & Spinach

This Creamy Orecchiette with Sausage and Spinach recipe is the ultimate comfort meal. It's rich, hearty and packed with flavor. The sausage pairs perfectly with spinach and orecchiette pasta, all coated in a silky cream sauce made from chicken broth. It’s warm, cozy and deeply satisfying, perfect for a chilly night or an easy weeknight dinner.

Ingredients

  • 2 white onion, chopped
  • 8 cloves garlic, minced
  • 2 pounds of spicy italian sausage or ground pork
  • 1 Tbsp Italian seasoning
  • 1 Tbsp dried basil
  • 1 tsp cayenne
  • 2 tsp fennel seed
  • 2 teaspoon paprika
  • 1 pound orecchiette pasta
  • 64 oz chicken broth
  • 4 cups spinach
  • Fresh parsley, finely chopped

Directions

  1. Add the ground pork and cook until fully browned, breaking it up as it cooks.
  2. Stir in the Italian seasoning, dried basil, cayenne, fennel seed, and paprika. Cook for another 2–3 minutes to let the spices bloom and flavor the sausage.
  3. Add the orecchiette and half of the chicken broth (16 oz). Bring to a boil and cook, stirring occasionally, until the pasta begins to soften.
  4. Gradually add the remaining chicken broth as the liquid cooks down, allowing the pasta to absorb the flavor while finishing cooking.
  5. Once the orecchiette is tender, stir in the spinach and parsley. Cook until the spinach is wilted and well combined.
  6. Top with freshly grated Parmesan and enjoy!
